- 1 large seedless cucumber, chopped
- 3 large avocados, pit removed and chopped
- Juice of 1 lemon
- 1/3 cup crumbled feta cheese
- 1 tablespoon finely chopped fresh dill
- Salt and black pepper, to taste
- In a large bowl, combine cucumber, avocado, lemon juice, feta, and dill.
- Gently stir to combine. Season with salt and black pepper, to taste. Serve.
Note-this salad is best the day it is made.
